Peanut Butter Cookies
Ingredients #
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup creamy peanut butter
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- Additional granulated sugar for rolling
- Sprinkles for rolling and fun
Instructions #
Preheat the Oven #
Preheat your oven to 350°F (175°C).
Cream Butter and Sugars #
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
Mix Wet Ingredients: #
Add Peanut Butter, Eggs, and Vanilla: Mix in the creamy peanut butter until well combined. Then, add the eggs one at a time, mixing well after each addition. Finally, stir in the vanilla extract.
Combine Dry Ingredients #
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
Mix Dry Ingredients into Wet #
Gradually add the dry ingredients to the peanut butter mixture, mixing until everything is fully combined. The dough should be thick and slightly sticky.
Shape the Cookies #
Roll the cookie dough into 1-inch (2.5 cm) balls. You can use your hands or a cookie scoop. Roll each ball in granulated sugar and/or sprinkles to coat it lightly.
Place on Baking Sheets #
Place the sugared cookie balls on the prepared baking sheets, spacing them about 2 inches (5 cm) apart. Use a fork to flatten each cookie and create a crisscross pattern on top.
Bake #
Bake the cookies in the preheated oven for about 10-12 minutes, or until the edges are lightly golden but the centers are still soft. Keep a close eye on them, as overbaking can result in dry cookies.
Cool #
Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely.
